Chefs for Change: Project 658 Shares the Versatility of Rice

If ever a food spans the globe and connects people across many cultures, rice has culinary ubiquity. Rice is one of the most widely eaten foods in the world and Project 658’s Chefs For Change dinner was a true celebration of the versatility of this amazing food.
Having the opportunity to watch talented chef Hector Gonzalez compose refined and experimental dishes with rice was a treat to all five senses.
John Timmons, one of the organizers of the event, said, “Something so normal and humble and ordinary can turn into something so creative and inspiring.”
And, this is truly what the evening was — inspiring.
The evening featured the following dishes:
- Tropical Salad, Mango, Beet & Bitter Greens
- Tuna Tartare, Rice Cracker, Edamame, Jalapeno
- Sake Lemondrop Cocktail
- Spring Roll Madness
- Arroz con Pollo ala Espanola
- Rice Tamal, Egg Yolk, Queso Fresco
- Horchata Ice Cream, Almond Crumble, Espresso, Chocolate Ganache
