After running his own bakery, instructing thousands of students and authoring 12 books, including the James Beard Award and IACP award-winning book, The Bread Baker’s Apprentice, it’s safe to say, that Peter Reinhart, chef on assignment at Johnson & Wales University, knows his bread.
But, he didn’t stop there. He’s one of the world’s foremost authorities on pizza, too. Creator and host of the Pizza Quest webseries and author of American Pie: My Search for the Perfect Pizza, Chef Reinhart is always on the hunt for the next big thing in pizza. And, he thinks he’s found it.
